Description: This Croatian staple is made with the milk of a particular sheep, and as a result this cheese has an absolutely unique flavor. Salty with a distinct tanginess, Paški's texture is very firm and the cheese crumbles readily. Unlike its close relation Dalmatinaz, Paški has a more grainy consistency, which is a result of its age as well a the cheesemaking process (it is rubbed with olive oil an ash throughout its development.)
