Lake Erie Creamery and Old Brooklyn Cheese Co. are proud to present their collaborative cheese, Goatzart, Cleveland's first aged goats cheese. Goatzart is premiering this Saturday, 12 pm, April 7, 2018 at Old Brooklyn Cheese Co.
Lake Erie Creamery makes the fresh goats cheese and Old Brooklyn Cheese Company looks after the affinage, the aging and finishing of cheeses.
Goatzart is a semi soft pasteurized goats milk cheese. Cave aged for 45-60 days. The mold ripened rind is pressed with extra virgin olive oil during the aging process. With age a translucent paste line develops under the rind. The flavors in the cheese are mild with an earthy, cellar-like aroma and a slight hint of blue in the rind.
